Donna's Stuffed Mushrooms
16 mushrooms
1/4 lb. butter (melted)
1/2 cup fine bread crumbs
2 eggs (slightly beaten)
! Tablespoon chopped parsley
1 Tablespoon chopped chives or minced onion
salt and pepper
Remove stems from mushroom caps and chop fine. Saute the chopped stems in 2 or 3
Tablespoons of butter. Remove from heat; add rest of ingredients. Brush caps with butter
and fill with the mixture, place in baking pan to which has been added a little beef or
chicken broth. Top caps with Parmesan cheese. Bake in 375 degree oven for 15 to 20
minutes, basting with juices from pan to keep them moist.
