Polynesian Meatballs
2 lbs. ground beef
3 tbs. soy sauce
1 tbsp. brown sugar
10 oz. water chestnuts, finely chopped
1/2 tsp. onion powder
1 tsp. parsley flakes
1/2 tsp. garlic powder (or 2 cloves, minced)-Combine all 7 ing. in large bowl. Mix well. Shape into small bite size balls...at least 40. Place on baking sheet with sides. Bake in 375 oven for about 15 min. Serve hot with Apricot Sauce. May be reheated in 400 oven for 5 min. or until hot.
Apricot Sauce
1 cup apricot jam
3 tbsp. cider vinegar
1/4 tsp. paprika
- In small bowl combine jam, vinegar and paprika. Stir well, pour into a bowl and dip meatballs in.
