SPICED NUTS
5 cups nuts of your choice (I use pecans)
1/4 cup vegetable oil
1 TBL ground cumin
1/2 tsp cayenne pepper
1/4 cup sugar
2 tsp salt
Preheat oven to 300°. Place nuts in a bowl. Pour the oil into a small, heavy saucepan & palce over medium-low heat until warm. Add the cumin & cayenne & stir until the mixture is aromatic, about 15 seconds. Pour the flavored oil over the nuts. Add the sugar & salt & stir to coat evenly. Transfer nuts to a large baking pan.
Bake, stirring occasionally, until the nuts are toasted, about 20 minutes. Watch carefully so they don't burn. Best served hot. Store in airtight container for up to 2 weeks. Reheat in 300° oven for 3-5 minutes.
