GERMAN PANCAKES (serves 6)
1 stick butter
4 eggs
1 cup milk
1 cup flourMelt the butter in a 9x13" pan in the oven as it preheats (to 425°). Process the eggs at high speed in the blender for 1 minute. Add the milk gradually, processing constantly. Add the flour gradually, procesing constantly.
Process for 30 seconds longer.
Remove the baking pan from the oven & tilt to coat the bottom evenly w/melted butter. Pour the pancake batter into the hot pan. Bake for 20-25 minutes or until golden brown. Serve hot with lemon slices & confectioners' sugar or maple syrup.
