Cherry Coconut Cake
Ingredients:Crust
1 1/2 cups flour
3/4 cups softened butter
5 Tbsp powdered sugar
Ingredients:Filling
3 eggs
1 1/2 cups sugar
1/3 cups flour
3/4 tsp baking powder
1/2 tsp salt
1 1/2 tsp vanilla
1 cup coconut
1 jar merechino(sp?) cherries, halved (I usually quarter them)
Directions:
Mix ingredients for crust with hand and form a ball. Pat into bottom of 9x13 pan (spray
with PAM). Bake for 25 minutes or until golden brown.
Mix filling ingredients together. Pour on to baked crust. Bake for 25 minutes or until no
longer runny. Don't over bake--filling will thicken as it cools. Usually when the top is
nice and brown, I take it out.
This is so, so, good. My mom and I used to make this together and before it had even
cooled we would grab our forks and go sit on the couch and eat this out of the pan! I love
it for breakfast too! LOL!
