One of the gals @ work brought this in yesterday. It is REALLY a great cake & VERY easy to make. I guess the name comes from the fact that when you eat it, you go Huuuuuummmmmm! (She said you don't even notice the little beaks in it! LOL)
HUMMINGBIRD CAKE

2 cups flour
1 tsp soda
1 cup oil
2 cups sugar
1 tsp salt
3 eggs
1 8-oz can crushed pineapple (juice & all)

Mix together in a bowl with a spoon (no mixer). Spread into a greased 9x13. Bake 350° for 45-60 minutes.

FROSTING
Mix together powdered sugar, 3-4 oz cream cheese, 1 tsp vanilla, 1/2 stick margarine.
