Lemon chiffon cake
1 pkg angel food cake
lemon flavoring
Prepare the angel food cake according to directions on the box, and add
about 1 1/2-2 teaspoons of lemon flavoring to the batter. Bake as directed
on package.
Frosting:
1 tub prepared lemon frosting
1 1/2 pt. carton of whipping cream
Put a bowl and your beaters in the freezer for a couple of hours to get
really cold. When ready to prepare frosting, pull them out, and add both
the whipping cream and frosting into the cold bowl. It takes a little while
to whip this, but turns out light and fluffy.
When cake is COMPLETELY cooled, cut in half, so now you have two layers. I
don't make the frosting until it is time to eat the cake, so it doesn't
condense. Frost bottom layer, then add the top layer and finish frosting
the cake.
This is a wonderfully light dessert and so good in the spring and summer.
Served this at many baby and bridal showers also. Enjoy. The recipe was
given to me by a neighbor when I was in high school.
