This cake is good with or without the frosting. It's easy to make and has no fat in the cake.
Mexican Fruit Cake
2 c. flour
2 c. sugar
2 tsp. soda
1/2 tsp. salt
1 (20 oz.) can crushed pineapple
2 eggs
1 tsp. vanilla
Mix ingredients in order. Bake in a 9"x13" greased pan at 350
degrees for 30 to 35 minutes.
Frosting:
1 (8 oz.) pkg. cream cheese
1 cube margarine or butter
2 c. powdered sugar
1 tsp. vanilla
Mix ingredients well and frost cooled cake.
