OUTRAGEOUS CHOCOLATE CAKE
8 oz semisweet chocolate
1 cup butter, softened
1 1/2 cups sugar
5 eggs, beaten
Ganache (recipe below)
1 cup fresh raspberries
Melt chocolate in double boiler over hot water. Cool slightly. Blend in butter 1 TBL at a time. Add sugar; beat for 1 minute. Add eggs; beat well. Pour into buttered 8" round cake pan lined with buttered waxed paper. Place in larger baking pan. Add boiling water halfway up side of cake pan. Bake in a preheated 350° oven for 1 1/4 hours. Cool. Chill for 2 hours. Invert onto cake plate. Spread with Ganache. Chill until serving time. Top w/raspberries to serve.
GANACHE
2 cups semisweet chocolate chips
1 cup whipping cream
Melt chips with cream in heavy saucepan, stirring frequently. Bring to a boil; boil briefly. Chill in refrigerator. Beat with mixer before putting on cake.
