PEANUT BUTTER CUPCAKES

1/2 Cup peanut butter
1/3 Cup shortening
1 Teaspoon vanilla
1-1/2 Cups brown sugar
2 Eggs
2 Cups sifted all purpose flour
2 Teaspoons baking powder
1/2 Teaspoon salt
3/4 Cup milk
Beat peanut butter, shortening and vanilla. Gradually
add brown sugar, beating until light and fluffy. Add eggs,
one at a time, beating well after each. Sift together dry
ingredients; add alternately with milk. Place paper baking
cups in muffin pans; fill one-half full and bake in moderate
oven, 375 degrees, 30 minutes or until done. Makes about
two dozen.
