With fall here and Halloween on the way, I thought this was a good one to share. Serve with whipped cream.
Pumpkin Gingerbread
List of Ingredients
1/2 c. packed brown sugar
4 T margaine softened
2 T sugar
2 eggs
1 c canned pumpkin
1/4 c. light corn syrup
2 T. molasses
1 1/4 c flour
1/2 t baking powder
1/2 t baling soda
1/2 t cinnamon
1/2 t ginger
1/4 t saltRecipe
Place brown sugar, margarine and sugar in large bowl. Mix with electric mixer until smooth. Add eggs,
mixing well. Add pumpkin corn syrup and molasses. Mix until smooth. Mix flour and all dry ingredients in a
small bowl. Gradually add dry ingredients to egg mixture. Mix until smooth. Pour into 8 or 9 inch square pan.
Bake at 350* for 25 to 30 minutes. Let cool. Cut into squares to serve.
