CHOCOLATE FILLED WALNUT OATMEAL COOKIES
1 cup butter or margarine 2 cups packed light brown sugar 2eggs
1 teaspoon vanilla extract
1/2 teaspoon instant coffee(opt.)
3 cups quick cook oats
2 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups chopped walnuts(divided)

Chocolate filling (recipe follows)

Heat oven to 350 degrees.In large mixer bowl,cream butter,and brown sugar, until light and fluffy.Add eggs,vanilla and instant coffee.Beat well.Combine oats,flour, baking soda,salt,and 1 cup of walnuts.Add gradually to creamed mixture.Batter will be very stiff:stir in last part by hand.Remove 2 cups of dough;set aside.Press remaining dough evenly over bottom of jelly roll pan. Prepare chocolate filling.Spread filling evenly
over oatmeal mixture in pan.Sprinkle remaining nuts over top.Bake 25 minutes or untill top is golden brown.Chocolate will be soft.Cool.Cut into bars.Makes about 4 dozen.
CHOCOLATE FILLING

1/2 cup butter or margarine
2/3 cup Hershey Cocoa
1/2 cup sugar
1-14oz.can sweetened condensed milk
1 1/2 teaspoons vanilla

In medium saucepan over low heat melt butter.Stir in cocoa and sugar.Add sweetened condensed milk;cook stirring constantly,untill smooth and thick.Remove from heat.Stir in vanilla.
