Quick Truffles
1/2 cup softened butter
2 1/2 cups powdered sugar
1/2 cup cocoa
1/4 cup evaporated milk or
cream
1 1/2 teaspoons vanilla
Blend all well. Chill until firm. Use a melon baller to scoop out, and
drop into a bowl of cocoa powder. Coat, then place on plate. Keep
covered and store in fridge.
(When these aren't for gifts or company, I pile it in a line on Saran
Wrap, roll up, and form in a log. Then I chill, and slice and drop into
cocoa powder. I also use the evap milk, I know, I'm only saving a few
calories, but it is a few.)
(If you choose, you can drop them into chocolate coating. I prefer the
bitter cocoa powder myself.)
