This is from my mom's long ago dessert to feed us 8 kids.
I still make it today and it's still just as good.
Cracker Custard

1 Can(lg) Evaporated Milk - 2 eggs
1 Can of water(fill milk can) - 1 Cup Sugar
2 tbsp.corn starch & 3 tbsp.water - 1tbsp.vanilla or to taste
1-1½ stack of unsalted soda crackers

Cream sugar with eggs in saucepan. Add milk then water slowly and stir until blended. Add corn starch mixed with 3 tbsp.
water in separate small cup or bowl. Add this mixture to
the "pudding". Cook on medium heat until mixture starts to
boil and becomes somewhat thick. Stir often. Add vanilla.
Add crackers after crushing them somewhat in your hands
while putting them into the "pudding". Stir. Let cool.

This dessert taste really great warm especially on a cold
day. It's just as good after it's been in fridge.

Enjoy a little cajun cooking.
