Lemon Mashmallow
1 can (1 3/4 cups) evaporated milk (Chill & whip)
1 (4oz) packet lemon jelly
1 3/4 cups hot water(if I really want to make sure it sets quickly I usde 1 1/2 cups water)
juice of 2 lemons (I prefer 1 lemon and 1 orange - about 4tb juice all together)
1 cup sugar
vanilla marshmallows - chopped (optional)Dissolve jelly in hot water
Chill until partially set
Whip until light and fluffy
Add lemon juice and sugar
Whip chilled milk and fold into jelly mixture
Fold in marshmallows.
Pour into large bowl and Chill to set
Decorate with piped whipped cream and mandarin slices.
