No-Carb No-Cook Easy Cheesecake (perfect for a fix)
1 pkg. unflavored gelatin (like Knox)
1 c. boiling water
2 8-oz. pkg. cream cheese
1 t. vanilla extract
8 to 10 pkg. artificial sweetener (sweetened to taste)
In mixing bowl, dissolve gelatin in boiling water. Cut cream cheese into small pieces
& place in dissolved gelatin. Add vanilla; stir until most of the cream cheese lumps
disappear (or use a blender or mixer). Empty packets of sweetener into bowl and mix well.
Pour into a dish (or, I pour into 4 Wine Glasses). Chill about 2 hrs till firm.
Optional:
After you get most of the cream cheese lumps out, stir in up to 1/4 c. of blackberries,
blueberries or chopped strawberries into the mixture. Or try different extracts (I used
Mocha Extract the other day - yumm)!
