OLDE FASHIONED PEACH COBBLER
FILLING:
1 stick butter
1 1/2 cup sugar
2 tbsp. flour
pinch of salt
8 ripe peaches, peeled and thinly sliced
1/2 cup brandy or water
CRUST:
4 tbsp.(stick) butter or margarine
1/2 cup sugar
1 cup flour
1 tsp. baking powder
1/2 tsp. salt 1/2 cup milk or fruit juice
Preheat oven to 350*F.
Filling: melt the butter in a medium-sized saucepan over medium heat. Stir in sugar,
flour, and salt: mix well. Then add the peaches and the brandy. Stir and heat thoroughly,
about 5 minutes. Pour into greased, deep 9x9-inch glass baking dish and set aside.
Crust: In medium-sized mixing bowl, cream the butter with the sugar, then add the flour,
baking powder, salt, and milk: mix well. Pour the batter over the peaches and bake for
about 1 hour or till golden brown. Serve with vanilla ice cream.
