  • Peach Delight

    Fill the bottom of a 9"x13" pan half full of fresh sliced peaches. Sprinkle with a little lemon juice, and about 1/4c. of sugar.

    In a mixing bowl beat:
    1 1/4 c. sugar
    4 1/2 T. margarine
    cream until smooth
    add:
    1 1/2c. flour
    1 1/2 t. baking powder
    1/2 t. salt
    3/4 to 1 c. milk
    Beat until you have a batter that you can spread.
    Spread over the peaches.
    Combine:
    1 1/4 c. sugar
    1 1/4 T. cornstarch
    Sprinkle over the batter.
    Pour 1 1/2 c. boiling water over the whole thing.
    Bake at 350 for 1 hour. This is so good warm with vanilla ice cream.
