Salmon Patties
This one's got no added fat! I love these salmon patties! I've been making them for years, and everyone comments on how moist and tasty they are.
1 can salmon, drained and cleaned of skin and bones and flaked.
1/4 Cup Kraft Fat Free Ranch dressing
1/4 Cup dry seasoned bread crumbs
1/4 teaspoon dry dill weed
about a pinch of garlic salt
about a pinch of pepper (I use white pepper, but you can use black pepper, too)

The mixture should be pretty moist, but not too sloppy. It should hold together when pressed. Add bread crumbs or fat-free dressing as needed. If you really feel like you need to, you can add an egg white. I have only done this once.

I've used a skillet sprayed with garlic flavored cooking spray to cook them. That works. I've also used my baking stone to cook them. They end up drier with the baking stone, but still tasty.

Sauce:

1/4 Cup fat-free mayo
1/4 Cup fat-free sour cream
1/4 teaspoon dill weed
1/8 teaspoon garlic salt
1/2 medium cucumber, peeled, seeded, and diced
about 3 Tablespoons red bell pepper, diced fine (for color - this is optional)

Taste the sauce and adjust as desired.

MMMMmmmm. I think I'll have this tonight!
