Chicken Parmesan W/Mushrooms & Artichokes
4 chicken breasts
1 cup whipping cream (unwhipped)
1 1/2 cup grated fresh parmesan cheese
1 lb mushrooms (either canned or fresh)
1 onion diced
1/2 cup cooking sherry or white wine
2 tbl butter
1 can artichoke hearts
1 small can black olives cut in two
4-6 garlic cloves pressed
1/4 tsp oregano
1/4 tsp basil
fesh pasta noodles
Heat a large skillet and melt the butter. Add the onions, garlic, mushrooms,artichokes
& olives, sautee for 5 min. Remove from pan and put into a caserole dish.
chop the chicken breasts into 1" chunks and brown quickly in skillet. Remove from pan
and spoon into caserole dish with veggies.
Deglaze the skillet with the cooking sherry, reduce liquid alittle then add the whip
cream, cheese and seasoning. Simmer until cheese is melted and mixed well with the sauce.
Pour over chicken and veggies in caserole dish and bake at 375 F for about 20-25 min.
Serve over pasta
