Fabulous Chunky Chili

I do this in a crock pot

1 lg onions, chopped
2 lg cloves garlic, minced
2 lbs. lean stew beef, cut into small pieces
1 lbs bulk pork sausage (I use Jimmy Dean)
1 lg can whole tomatoes (I break these up, I don't like crushed tomatoes as they seem sweet)
1 6oz can tomato paste
3 tbsp. chili powder (I use about half as I don't like things real spicy)
1 1/2 tsp cumin
1 1/2 tsp oregano
2 1lb cans baked beans
1 tsp salt
1 tsp sugar
1 tbsp. cocoa powder (Baker's in dark brown can)
1 15oz can kidney beans, drained
1 15oz can pinto beans, drained

Put everything in a crock pot and cook on low heat for about 6 hours. This is wonderful!!

Cornbread Casserole

2 lg onions, chopped
6 tbsp butter or marg.
2 eggs
2 tbsp. milk
2 17oz cans cream style corn
1 1lb pkg. corn muffin mix (I use 2 pkgs Jiffy mix)
1 cup sour cream (I like sour cream so I use more)
2 cups shredded sharp cheddar cheese

Preheat oven to 425 degrees. Grease a 9 x 13 baking dish. In a med. skillet saute the onions in the butter
until golden, set aside. In a medium bowl mix eggs and milk until blended. Add corn and muffin mix; mix well.
Spread cornbread batter into baking dish. Spoon sauteed onions over top. Drop spoonfuls of sour cream on
the onions and spread around. Sprinkle cheese over all. Bake 35 minutes or until puffed and golden. Let stand
10 minutes before cutting. I serve this with the Fabulous Chunky Chili.
