                       JAMBALAYA
1/3c.oil
1c.chopped onion (large onion)
1c. chopped celery
1/2c.chopped bell pepper
3 cloves garlic,chopped
1lb.sausage..sliced or cut in small pieces
2 c. water
2c.COOKED rice
Parsley flakes(optional)
salt and pepper to taste.

Heat oil in heavy large pot on medium. Add onions and saute until they start to turn brown.(the browner the better,,without burning!) stir often. Add celery and bell pepper and cook until tender.(about 5 minutes) on low heat.
Add garlic and stir. ..add the sausage.
Cook on medium heat about 10 minutes. Add  2 cups of
water and let simmer for at least 30-45 minutes.Or until
liquid is reduced by half. Add cooked rice ,salt and peper. ENJOY !

You can use other meats as well.... Shrimp is especially good.
Chicken,,deboned...makes another great jambalaya.
