Jazzing up couscous
box of couscous
1 can of vegetable broth
1 block of firm tofu (cut up)
1 can of vegetarian baked beans or black beans
sliced onion or onion power to taste
1 chopped tomato
fresh dill, cilantro or parsley
Heat up the vegetable broth in a casserole dish in the microwave. While that is going on,
sautee the tofu in lite vegetable oil in a skillet. Add the baked beans and sliced
onions/onion powder. Let simmer.
Add the couscous to the vegetable broth. Wait till it is nice and fluffy. Pour the
bean/tofu/onion mixture over it. Add the chopped tomato. Sprinkle with dill, parsley or
cilantro.
THIS IS QUICK AND EASY AND FILLING AND MAKES ALOT!
