MEXICAN LASAGNE
1 - 15 oz. can of Hormel chili--no beans
1 - 16 oz jar of salsa ( I use med hot)
1- 8 oz. can of mushrooms,drained
3/4 cup Parm. cheese
1½ tsp. Italian Seasoning
1 medium onion-chopped
1½ cups cottage cheese
1½ cups Parsley flakes
12 lasagne noodles
2-2½ cups shredded Mozzerella cheese (or a taco blend)
Black olives,chopped and drained
**In a large bowl,combine chili,salsa,mushrooms,Parm.cheese,black olives,Italian seasoning
and onions.
**IN another small bowl,combine cottage cheese and parsley.
** Cook noodles,drain.
**Heat oven to 350º,spray a 13 x 9 pan with veg spray and make 3 layers as follows :
4 noodles
1/3 of the cottage cheese mix
1/3 of the chili mix
1/3 of the shredded cheese
** Bake 25 minutes..(uncovered) let stand 10 minutes and enjoy!!!!
