I love this one but you have to have fresh basil. Not a real recipe:
PASTA WITH BRIE
Heat 1 cup olive oil (not real hot), add a bunch of minced garlic & 2-3 cups seeded, chopped tomatoes (Romas are perfect). Keep it over LOW heat while you cook the pasta. Mince up a bunch of fresh basil & also a little fresh parsley if you have it. Remove the coating on a round of Brie (comes in those little wood boxes, don't know the weight). Break up the Brie into pieces about the size of a tablespoon. Drain the pasta & pour the olive oil/tomato mixture over the pasta, add the Brie & basil & toss until the cheese melts. Salt & pepper to taste.
