Sage's Chicken Fajitas
3 T. fresh lime juice
2 T. chicken broth, defatted
1/2 tsp. ground cumin
1/8 tsp. ground red pepper
1 lb. skinned, boned chicken breast halves, cut into thin strips
1 yellow, red, & green pepper, cut into thin strips
1 onion, thinly sliced
1 clove garlic, minced
1/4 tsp. grond black pepper
12 sm flour tortillas, warmed
In med bowl, stir together lime juice, broth, cumin, & ground red pepper. Add chicken & toss til coated. Lightly spray an unheated pan w/PAM. Heat over med-high heat. Add chicken mixture; yellow, red, & green peppers, onions, garlic, & black pepper. Cook & stir about 3 min & the veggies are crisp-tender. Serve warm over tortillas.
