Salmon Cakes
1 can salmon, reserve liquid
1 egg
2 pieces of white bread, broken into small pieces.
dash lemon juice
salt, pepper to taste.

Skin and debone salmon, reserving liquid. Break salmon into chunks, mix with egg, bread pieces, lemon juice, salt, pepper and enough salmon liquid to moisten. Shape into patties and fry in small amount of hot oil until golden brown.

I usually serve these with mashed potatoes and another veggie.
