SALMON CORN CAKES
3 eggs
2 tbs flour
2 t salt
dash of pepper
1 can (12 oz) whole kernel corn, drained
1 can (7 3/4 oz) salmon, drained & flaked

Grease heated griddle if necessary. Mix eggs, flour,
lemon juice, salt, pepper. Stir in corn and salmon.
(I debone my salmon)
Drop by spoonfuls onto griddle, flatten slightly. Cook until golden brown, about 3 min on each side.
Grease griddle as necessary.
