Singapore Shrimp
1 Lb. shrimp,scallops,pork or chicken
Marinate meat or fish in egg white,cornstarch mix.Add salt and pepper. Let marinate 15 minutes.
Prepare
3-4 garlic cloves, minced
1 onion, diced
1 thumb sized piece of fresh ginger, minced
2 t. each. catsup, shoyu, sugar,rice wine or sherry.
1 t. sesame oil
1 T. chili paste
1 T. oyster sauce
3 Green onions, chopped
Heat wok or frying pan until hot. Add 2T. peanut or vegetable oil. Stir fry meat until just done. Remove from pan and drain.
Add 2T. oil to pan. Add onion, garlic and ginger stirring until lightly browned.Add catsup mixture. Stirring constantly add chili paste. Remove meat to pan. Remove from heat. stir in wine, sesame oil and oyster sauce. Pour onto seving plate and garnish with green onion.
