Skillet Hopping John
1 large onion chopped
2 large cloves, pressed
2 Tbl butter or margarine, melted
2 (16oz) oz cans black-eyed peas drained and rinsed
2 cups cups chicken or beef broth
1 cup uncooked regular rice
1 tsp salt
crushed red pepper
Saute onion and garlic in butter until tender. Stir in black-eyed peas, broth, rice, salt
and 1/2 tsp crushed red pepper.
Bring mixture to a boil; cover and simmer 20 minutes or until liquid is absorbed and rice
tender. Serve with additional crushed red pepper if desired
