JOHN'S SKUNK STEW
INGREDIENTS
1-2 not too badly damaged road-kill skunks 2 tablespoons bacon fat or
butter
4-6 tablespoons flour
3 cups stock or chicken broth
2-3 large potatoes, quartered
1 large onion, sliced
3-4 carrots, peeled, cut into chunks
salt and pepper to taste
2 bay leaves
1 teaspoon garlic salt
2 tablespoons parsley flakes
1/3 cup cream
INSTRUCTIONS
Clean (as best you can) the skunks. Remove all the gravel and road tar
as well as any buzzard droppings. Lay skunks aside. Heat bacon fat (or
butter) in a large pot or dutch oven and saute the onion until soft.
Stir in the flour and mix thoroughly. The mixture will be dry at this
point. Now add the stock or bouillon, stirring well to pick up the
flour. Add the carrots, potatoes, parsley, and seasonings and bring to a
boil. Then turn the heat down to a gentle simmer and cook about 15 -
25 minutes, until the carrots are tender. Just before serving, add the
cream, stirring until well blended and sprinkle the dried parsley over
the top. Serve over rice. Oh, yes. Before eating the stew you may want
to throw away the rotting skunk. We never put it in the stew anyway did
we?
