Spaghetti Carbonara
1 lb spaghetti
3 T. oil
2 cloves garlic, crushed
1/2 lb bacon, cut into 1" pieces
3 eggs
1/4 c. Romano cheese, grated
1/4 c. Parmesan cheese, grated
1 tsp. ground black pepper
2 T. fresh parsley, chopped
Boil lg pot of lightly salted water & cook pasta. Warm oil in lg pan over med heat. When oil is hot, add garlic & saute, stirring constantly, til garlic is golden, 3 mins. Remove garlic from oil; discard garlic. Add bacon to garlic-flavored oil in pan & cook, stirring frequently, til just begins to brown, 5 mins. Remove from heat & set aside. Put eggs in lg serving bowl & whisk them lightly. Whisk in cheeses & pepper. When pasta is cooked, drain but leave a little water clinging to the noodles. Reheat the bacon & add it to the pasta along w/parsley. Toss again, serve warm.
