CHICKEN ORIENTAL (serves 8)
2 tsp salt
1/4 tsp pepper
1 cup frozen orange juice concentrate, thawed
1/3 cup melted butter
2 tsp ground ginger
4 tsp soy sauce
5 lbs chicken thighs, skinned

Combine salt, pepper, orange juice concentrate, butter, ginger & soy sauce in a bowl & mix well. Rinse the chicken & pat dry. Arrange in single layers in two oiled 7x11" baking pans. Pour the soy sauce mixture over the chicken. Chill, covered, overnight. Bake uncovered in a preheated 350° oven for 1 hour or until the chicken is cooked through, basting once with the pan drippings.
