CHICKEN MOZZARELLA
4 skinless, boneless chicken breasts
2 tbsp flour
1 tsp dried basil leaves
1 tbsp oil
1 can condensed tomato soup
2 tbsp water
4 slices mozzarella cheese
1/4 cup chopped green pepper
Place chicken between 2 sheets plastic wrap and pound to 1/4" thickness. On waxed
paper, mix flour & basil. Coat chicken lightly. In 10" skillet over med-high
heat, in hot oil, cook chicken. Add soup & water, stir. Reduce heat. Cover, cook 5
minutes until chicken is done. Uncover; top each breast with a cheese slice & sprinkle
with peppers. Heat until cheese begins to melt.
