TARRAGON CHICKEN WITH ANGEL HAIR PASTA (serves 6)
6 boneless chicken breast halves
3 TBL butter
2 cloves garlic, minced
1 tsp dried tarragon, crumbled
1 cup heavy cream
3/4 cup grated Parmesan
1/4 tsp salt
1/2 cup dry white wine
1/4 tsp cayenne pepper
1 lb angel hair pasta, cooked
Lightly pound the chicken between pieces of waxed paper to 1/4" thick. Saute in the
butter over medium-high
heat for about 1 minute on each side. Add the garlic, tarragon, cream, Parmesan, salt,
wine & cayenne. Stir until
blended; cook over medium heat until the chicken is done & the sauce is slightly
reduced, about 15 minutes.
Serve over pasta.
