My Mom's Cornbread Dressing
12 slices day old bread-toasted
1 recipe baked corn bread (I use the packets, if you use the packet you will need eggs and milk per packet directions)
3 cups chopped onion
3 cups chopped celery
1 cup turkey fat or butter (I use butter)
2 cups turkey broth, chicken broth, or veg broth (your choice, I use veg broth, mom uses chicken broth, both are good)
2 eggs
1/2 tsp. sage
salt and pepper to taste

In a large pot, cook the celery and onion in the turkey fat or butter until the veggies are transparent.
In a large bowl, crumble the cornbread and toast in very small pieces.
When the veggies are finished cooking, pour them into the bowl with the toast/cornbread mixture, let cool slightly (so that the eggs don't cook) then stir in the eggs and seasonings. Mix well.

Put in a baking dish. Bake uncovered at 350 for 30 minutes.
