Apple custard pie

2 c. sour cream
14 oz evaporated milk
1/4 c. frozen apple juice concentrate, thawed
2 egg whites
1/4 c. chopped pecans
2 t. vanilla
1 t. cinnamon
3 large apples
2 Tbsp. margarine
1/2 c. brown sugar
2 9 oz. unbaked pie shells

Glaze
1/2 c. frozen apple juice concentrate, thawed
2 tsp. cornstarch
1 tsp. cinnamon

Bake pie shells at 375* for 15 min. In a bowl combine sour cream, milk, apple juice, egg whites, pecans, vanilla and cinnamon. Mix until smooth. Pour into shells. Bake at 375* for 30 minutes or until custard has set. Cool.

Prepare apples and slice. Saute in margarine until crisp. Sprinkle brown sugar over apple slices. Arrange on top of pie, once it has cooled.

Glaze: combine apple juice, cornstarch and cinnamon in small saucepan. Heat over low heat, stirring constantly until thickened. Pour glaze over pies and serve.
