LEMON SPONGE PIE

1/4 cup soft margarine
1 cup sugar
...cream until fluffy, in a large bowl.
Beat in :

3 lg. egg yolks-one at a time-beat after each egg.
Add:

3 (half heaping) TBS flour
grated rind of 1 lemon
1/3 cup lemon juice
...mix.
SLOWLY ADD:
1 & 1/4 cup of milk..gradually & beat til blended.
In seperate bowl..

beat 3 egg whites till peaks are just stiff-don't overbeat! FOLD into
other mixture until blended.
Pour in an unbaked pie shell.
BAKE AT 400° for 7 min.
then 325° for 30 minutes.
