Sour cream raisin pie
1 c. raisins
1 c. brown sugar
1/3 c. cornstarch
2 eggs, beaten
1 c. sour cream
dash salt
4 c. whipped topping
1 10" pie shellCook raisins in water until plump. Drain, reserving liquid. Measure 1 c. liquid (add water if needed) Add 1 c. liquid and brown sugar to rasins, and bring to a boil. Dissolve cornstarch in water and stir into raisin mixture, stirring constantly to avoid scorching. Slowly add eggs, stirring until eggs are cooked. (Mixture will be quite thick) Cool.
When mixture has cooled, add sour cream. Fold in 2 cups whipped topping. Spoon into pie shell. Chill Immediately berfore serving, top with remaining whipped topping.
