Strawberry Pie
makes 8 servings, about an hour chilling time.
1 small (3oz)package strawberry gelatin
1 cup boiling water
1/2 cup cold water
1 pint vanilla ice cream, softened
1 cup sliced fresh strawberries
1 (9") pastry shell, baked and cooled, or graham cracker
crust
Whipped cream and fresh strawberries for garnish, if
desired.
**In a mieduim mixing bowl, dissolve gelatin in boiling water. Add cold water and stir well to mix. Cut ice cream into 6 chunks and add to gelatin mixture. Stir until ice cream melts. Cover and chill mixture until ti starts to thinken and mound when spooned, 20-30 min.
Gently fold in sliced strawberries. Pour into cooled pastry or graham cracker crust. Chill till firm 20-30 min. Garnish with whipped cram and strawberries, if desired.
