Broccoli-Pea Salad
1 (10 oz.) frozen peas
1 bunch broccoli
1 (5 OZ.) sliced water chestnuts
2 cups cooked chicken
3 to 5 sliced green onions
2 to 3 stalks diced celery
1 can wedged black olives
Curry Dressing
1 1/4 cup mayonnaise
1/4 tsp. curry powder
1/4 tsp. turmeric
Partially thaw peas. Wash broccoli and cut off flowerets
(save stems for other uses). Combine all salad
ingredients in large mixing bowl. Add dressing
just before serving on bed of lettuce.
Curry Dressing: Mix mayonnaise, curry powder, and
termeric. Add enough liquid from cooking
chicken to make a medium thin dressing.
Serves 12
