This is really a great treat salad...it taste almost like Carmeled Apples.
it makes a nice side dish on a hot afternoon.
I've taken it to family reunions and it never lasts long enough to worry
about it setting out.
Candy Apple Salad
6-8 Granny Smith apples (cored, with skins on, cut into bite sized peices.)
1 1/2 cups dry roasted, unsalted peanuts, chopped
16 ounces crushed pineapple, well drained
8 ounces Cool Whip lite
Combine above ingredients in large mixing bowl, set in refrigerator.
In medium saucepan combine;
1 cup sugar*
2 eggs
2 tablespoons Apple cider vinegar
2 tablesppons cornstarch
Mix toghether and bring to a boil over medium heat, stirring constantly,
until mixture thickens to pudding consistancy. (it may turn brown and
appear to be burning - this is normal)
Add mixture to apple mixture, stirring well.
Refrigerate for 2 hours before seving.
* for reduced sugar -- substitue 1 cup sugar for 12 packets Sweet-n-low ans
1 cup water.
