I just discovered boiled green soybeans. They are wonderful.

Edamane Salad
Serve this refreshing mixture as a salad or topping for pasta.

1 pound Edamame soybeans
3 medium tomatoes, chopped
2 green onions with tops, sliced
2 tbles. olive oil
2 tbles Balsamic vinegar
1 piece Parmesan cheese(about 1 1/2 to 2 ozs.)
salt and pepper to taste

Cook soybeans according to package. Cool and remove from pod. Put beans in medium bowl and add tomatoes, onion, oil and vinegar. Toss gently. With a vegetable peeler, shave cheese as desired directly onto salad. Season, toss gently.
Makes 4 servings
