Potato Salad--How do you make it?
Posted by Marilyn C on Sun, Apr 16, 00 at 22:40
Well, of course, I know how to make potato salad, but I
think everyone makes it different. Thought some would go
well with all that ham. I make a fairly traditional
kind--eggs, celery, Claussen dills, sliced stuffed olives,
bell pepper, green or purple onions, and I like the potatoes sort of chunked up but not
real firm and not mashed. I dress it with mayonnaise colored with a little
mustard, thinned with dill pickle juice, and a big handful
of fried, chopped bacon and a little Tony's seasoning.
What do you put in yours?

I cook my potatoes in the microwave in Saran Wrap and fix the salad either with the
potatoes hot or cold. I use boiled eggs, dried onions, pimento, pickle relish, mayo with a
touch of yellow mustard and a couple of tbls of creole mustard. I, too, am asked to bring
potato salads to potlucks and family gatherings.

Potatoes (imagine that!), eggs, celery, onion, and I put Miracle Whip, little french
dressing and a squirt of mustard in a bowl, add about 1 t. of milk and stir till creamy,
then pour over salad. Repeat if necessary. Yum, sounds good right now! I tried the canned
potatoes, cause Ijust abhor peeling them, but they have a yucky tinny taste.

The secret to any good 'tater salad..is to make it while the potatoes are still really
warm! I use salad dressing, vidalia onions or scallions, celery, lots of eggs & a
little red sweet pepper & crumbled bacon. I also put the crumbled eggs, salt &
pepper, & 1 tsp. of yellow mustard & 1 Tbs of sugar in with the eggs, then add the
salad dressing. Mix it well then add it to the warm potatoes & using my hands , blend
to coat all the potatoes with the egg mixture.

RED potatoes, green bell peppers, chopped onions, pimentos, kosher dills, celery, eggs,
Miracle Whip thinned with milk, paprika sprinkled on top. I chop my potatoes in small
squares because they absorb the flavors better than big chunks.

My Dh likes it pretty plain so if I am making it just for the family-potatoes, eggs.
Miracle Whip, celery salt, pepper, paprika, a tiny bit of sweet relish with juice. If I am
making it for a potluck then I will add onions and peppers.

Redskin potatoes, mashed, skin on or off depending on whether or not I feel like peeling.
Hardboiled egg, yolk mashed and mixed with mayo and a bit of sour cream, dice the egg
white. Add olive juice and finely chopped olives and/or dill juice and dill pickles. Onion
and bacon to taste. Great hot or cold.

I like regular potato salad but I went to someone's house once and they had cut up the
potatoes and lightly coated with olive oil. Mixed in LOTS of chopped parsley and garlic.
Add salt and pepper. It was sooooo good.

Mine is pretty plain. I use potatoes (duh), cut in chunks, mayo and/or miracle whip, and a
few dashes of worchestshire (sp?) sauce. It gives it a subtle kick like the mustard and
everyone asks what I did different--they like it! Depending on my time and mood, I will
also add hard boiled egg, celery, onion, pickle relish, etc. I have also added cubed ham,
to make it more of a main dish salad, for potlucks.
