Potato Salad Vinaigrette
1 1/2 lbs sm red potatoes
2 T. red wine vinegar
2 tsp. country-style Dijon
1 clove garlic, minced
2 1/4 tsp. chopped fresh or 3/4 tsp. dried marjoram
1/4 tsp. salt
1/8 tsp. pepper
3 T. oil, preferably canola
1/4 c. thinly sliced red onion
1 T. chopped fresh parsley
In lg pot combine spuds w/enough cold water to cover; bring to a boil. Cook til spuds are
tender 8-10 mins;l drain. In sm bowl, combine vinegar, mustard, garlic, marjoram, &
s/p,; slowly whisk in oil til mixture thickens slightly. In lg serving bowl toss spuds,
onion, parsley w/dressing til well combined.
