Seven Layer Lettuce Salad

1 head lettuce -- washed & drained
1 cup celery -- chopped
1 cup red onion -- chopped
1/2 cup green pepper -- diced
10 ounces frozen peas -- uncooked
2 cups mayonnaise
3 tablespoons sugar
crisp fried bacon -- broken up
Cheddar cheese -- grated

Break lettuce into pieces and place on bottom of 9x13-inch pan. Add onion, celery, green pepper, and frozen peas. Mix mayonnaise and sugar together until blended well; and spread over the vegetables. Refrigerate 12 hours or overnight. Before serving, add cheese and bacon.

NOTES : **Before topping salad with mayo, you may also want to add fresh mushrooms, cucumbers, and/or sliced hard boiled eggs
