Shrimp and Cabbage Salad
1 head of cabbage
2 cans medium or large deveined shrimp
Cracked pepper
Mayo
Drain shrimp (reserve juice from one can) and place in ice water for 20 minutes (helps to
bring out flavor).
Clean and chop cabbage-like you would for a rgular salad.
Mix mayo, lots of cracked pepper and the shrimp juice onto cabbage. Mix well.
Add the shrimp and toss gently so as not to break the shrimp.
I usually clean and cut up the cabbage the day before, store it in a plastic bag and mix
all 1/2 hour before serving.
