Summer Spinach salad
1/2 c. vegetable oil
1/4 c. chopped onion
2 T. + 2 t. cider or red wine vinegar
2 T. + 2 t. sugar
1 1/2 t. ground mustard
1/2 t. salt
1 1/2 t. poppy seeds
8 c. torn fresh spinach
3 green onions, sliced
2 pints fresh strawberries sliced
3 large ripe bananas, sliced
1/2 c. slivered almonds, toasted
Place first 6 ingredients in the blender or food processor; cover and process until the
sugar is dissolved. Add the poppy seeds; process just until blended. In a salad bowl,
combine the remaining ingredients. Drizzle with dressing; toss to coat. Serve immediately.
Just got this out of quick cooking magazine. Looks sooo good, and we are going to have it
for dinner tonight.
