Alice MT Potato Soup
I usually cube and cook the potatoes, but this time I baked them in the microwave. Then I
took things I had on hand to add, like cauliflower and monterrey jack cheese.
I made a pressed garlic and olive oil and flour roux. I scooped out the baked potatoes and
added them to the steamed cauliflower, then put them through a foley's mill. Then I put
the potatoes, cauliflower, garlic, olive oil, flour, all together in the soup pot. I added
Worcestershire sauce (something I always use in potato soup) and low fat milk, grated
monterrey jack cheese, and salt and pepper. Warmed it all up and served it in deep bowls.
YYUUUUmmmmmmmmmm!!! It was great.
