Baked Potato Soup (6-8 servings)

4 medium baking potatoes
1/4 c. butter
1/4 c. flour
1/4 tsp. white pepper
4 c. chicken broth
1 1/2 c. whipping cream
1/3 c. sour cream
1 Tbs. chives or green onion tops

Bake potatoes and cool. Scoop out ito a bowl and mash. In a large saucepan, melt butter. Stir in flour and pepper till smooth. Add mashed potatoes; stir in chicken broth. Cook and stir till thickened and bubbly then cook and stir for 1 minute more. Stir in whipping cream, sour cream and chives on green onion tops. Heat through, but don't boil!

***I like to add a little green onions,shredded cheese and a little bacon bits to the top of each soup in the center before I serve. Enjoy!!!
